Baked Tilapia

INGREDIENTS

  • 4 (4 ounce) fillets tilapia
  • salt & pepper
  • 1/2 teaspoon grated garlic
  • 1/2 stick of butter
  • onion slices
  • 1 lemon, sliced
  • 1 (16 ounce) package frozen cauliflower with broccoli and red pepper (optional)
  • Basil

DIRECTIONS

1. Preheat the oven to 375 degrees F (190 degrees F). Butter a saute pan.
2. Place the tilapia fillets in the bottom of the pan – season with salt & pepper, grated garlic and dot with butter. Top each one with slices of onion and lemon.
Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper.
3. Cover the pan and bake for 25 to 30 minutes in the preheated oven, until vegetables are tender and fish flakes easily with a fork.

Serve with a green salad and either baked potato, yam or tater tots. (I like the tater tots)

Tip…Economize by cooking this in the last minutes of baked sweet potatoes or russets…or cook at the same time as tater tots…
