Beef Stew – Straight Up

Ingredients
2 lb beef cut in 1′ cubes
6 tbsp flour
1-2 sweet onions
3-4 stalks celery
3-4 cloves garlic
2 large jalapeno
3-4 carrots
1 28oz can crushed tomatoes
28oz water
Bay leaf
3-4 small potatoes

Method

S/P liberally the beef and place in a plastic bag, paper bag or Tupperware type device and douse with the flour. Shake and let sit @ room temp for about 20-30 minutes.
3 tbsp canola oil in a large dutch oven and sear, going in batches. Do not crowd! It will only sweat and turn gray. Add more oil if need be. Remove and add more oil then drop onion, celery and carrots. S/P. Stir up all of the crud left behind from the beef. 3-4 minutes later add garlic and jalapeno. Stir in the can of tomatoes. Reintroduce beef, add can of warm water. Add bay leaf and bring to a boil. Reduce heat to low, cover and simmer for 1.5 hrs.
Dice Potatoes into 1″ cubes and drop into stew (add water if needed). Bring back to boil and reduce heat, cover and simmer for 30 minutes. Stir on occasion.
Remove bay leaves, taste and adjust and simmer for 15 more minutes uncovered. Add i pkg of frozen corn/green beans at the end if desired.


Italian Goulash

I adapted this from Michael Symon’s recipe.

Ingredients

1 pkg egg noodles
1 lb ground Italian Sausage
1 pkg frz Italian Cut Green Beans
1 Red Bell Pepper
1/2 onion
1 serrano
2 cloves garlic
2 Tbsp basil or 1/2 c fresh
2 Tbsp butter
S/P as you like

Method

Thaw beans in microwave and boil pasta. Reserve 2 cup pasta water.
Sear the sausage. Med high heat so it starts to caramelize.
What I do is throw it in and mash it up and leave it alone until you see the meat begin to cook through. Then throw the veggies in and now stir. Let cook for about 5 minutes. Add butter, pasta water and basil.
Stir in pasta and beans.
Grate some parm or whatever and eat.

Tip – Use any noodles you like but if you are using egg noodles, try not to stir to often after integration.


Chipotle-Lime Grilled Shrimp

Ingredients

1 pound large shrimp
Chipotle and Lime Marinade (1 can chip in adobo with 1/4c lime juice)
½ teaspoon paprika
½ cayenne pepper
½ teaspoon garlic powder
½ teaspoon dry mustard
½ teaspoon black pepper
½ teaspoon salt

Method

Combine can of chipotle in adobo sauce with lime juice and marinate the shrimp up to an hour. They are marinating in lime juice so no more than 1 hour or they will start to cook and your shrimp may turn out dry. We can’t have that.
You can buy the peppers already minced in the adobo or cut them up with scissors.
Place on hot grill for about 2-3 minutes per side.
Mix spices in a glass bowl and drop grilled shrimp into it. Toss.

Don’t be shy and lick your fingers. That’s where the fun is!
