Spicy Sweet Potato Chips

Ingredients

1 to 2 sweet potatoes, washed and dried (1 large or 2 small)
2 tablespoons extra-virgin olive oil
1 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Method

Preheat the oven to 450 degrees F. Line 2 large baking sheets with parchment paper.

Cut the potatoes in 1/4-inch-thick slices. In a large bowl, add the oil and seasonings. Add the sliced potatoes and toss to coat. Place in a single layer on the prepared baking sheets. Bake until lightly browned and crisp, about 10 minutes.

Crock Pot Fajitas

Ingredients

1 1/2 lb flank steak, sliced
1 Cup onion, chopped
1 green pepper, chopped
1 jalopeno pepper, chopped
1 tablespoon cilantro
2 teaspoon minced garlic
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon salt
1 8 oz can diced tomatoes
12 8 inch tortillas

Method

mix all dry ingredients together, pour over meat then add meat to pot, add onions peppers and tomatoes, mix slightly leaving meat on bottom as much as possible while mixing.
Cover; cook on low 8-10 hours or high 4-5 hours (Icooked mine high 4 hours)
Serve with tortillas


Rosemary Bread

Ingredients
approx 2 1/2 cup flour
1.5 tbsp rosemary
1 tsp salt
1 tbsp oil
2 tbsp honey
7/8 c water 110 degrees

Method

This takes practice to perfect because flour to water varies due to moisture in the air.

Sift dry ingredients together beginning with 1 1/4 c of flour.
Add oil and honey to the water and mix well.
Add water mix to flour and stir well.
1/4 c at a time add remaining flour to a pliable dough and drop to a floured surface.
Knead for about 8-10 minutes until a good ball of dough forms that doesn’t readily stick to your hands or the surface.
Place ball into a large, oiled, glass bowl and cover for 1.5 hrs.
Punch down and place on a well floured surface to mold or drop into a bread pan.
Let rise for about 30 minutes or until the dough raises 1-2 inches above pan.
Bake 10minutes at a time @ 400 degrees until top browns nicely, usually about 20-25 minutes.

I will open up the oven in the last 5 minutes to slowly ‘finish’ the browning.
