Butterfly Pork Chops & Rice
Ingredients
- 4 lean pork chops
- Salt and pepper to taste
- 2 tbsp. oil
- 2 tbsp. butter
- 1 c. raw jasmine or wild rice
- 1/2 c. chopped bell pepper
- 1/2 c. chopped onion
- Garlic
- 2 3/4 c. chicken broth
- 1/4 tsp. thyme
Brown seasoned pork chops in oil. Remove from skillet.
In the same skillet, brown the raw rice in butter until it has a nutty color. Add the remaining ingredients and stir until blended.
Place rice mixture in a 13 x 9 inch pan.
Place pork chops on top.
Cover with foil and bake at 350 degrees for about 40 minutes
Serves 4.
