Classic Pesto

Unless you grow a ton of basil, it it easier to purchase some basil plants from the grocery store. It is actually cheaper than buying it from those little plastic containers from the produce department. Plus, you can keep them growin to add to your garden.

This is very simple…

Classic Pesto

  • 4 cloves garlic, crushed
  • 3 cups, packed, coarsely chopped basil leaves
  • Kosher salt
  • 1 tablespoon pine nuts
  • 3 tablespoons Asiago cheese
  • 1/2 to 1/3 cup extra virgin olive oil

In a food processor, pound the garlic, basil, pinch salt, pine nuts and cheeses into a paste. Gradually blend in olive oil; adjust seasoning.


Pork Loin Steaks

I have covered this once before in ‘Too Cold To BBQ?’ but I think it needs to be reiterated in a more clear and methodical manner.

Pork Loins simmering in gravy

Pork Loin Steaks with Jasmine rice and Broccoli

  • Olive oil
  • Butter
  • Seasoning of choice
  • Broccoli bunch
  • 1 cup jasmine rice
  • 2 cups water
  • 1/2 onion
  • 2 tbsp flour
  • 2 cup stock

This whole thing is about timing.

  • Pork – 12 minutes
  • Rice – 15 minutes
  • Gravy – 10 minutes
  • Broccoli – 10 minutes

Total cooking time is about 25 minutes, but the prep and heating the pans and such are paramount to the method.
So, begin by preheating the oven to 400 deg.

Killer Chili

2 alarm (see below)

burger

jalapeno sausage

garlic

onion

28oz can tomatoes

14oz can of Rotel Habenara tomatoes

2 cans drained beans of your choice if you so choose

Run this method…all is fine

Ya know that lil pack of crap you get from the market, the 2 alarm stuff? Yeah, just take all that stuff, leave out the salt and mesa, and combine it into one bowl or container, ya don’t need it all.

What I do is combine and place all of it in a shaker type thing and use it later…ya really don’t need all of it, just about half. Makes a nice shake on some chicken or somthin later.

Brown 1lb burger….whilst doin that cube on the jalapeño sausage ya got.

Drain the burg and brown that sausage, when it get a bit frisky add some garlic and a huge onion…Let them get to know each other for about 12 minutes.

Add one  huge cans of tomatoes plus one of the baby cans…let all of that just stew for about 10 minutes the add about half of that 2 alarm we talked about earlier….

Add burger…more jalapeños if needed and just grab a beer and chill for a bit. (ifn ya like beans…give a few minutes before you add them into the mix, Texans don’t think it’s right, but find me one that won’t eat this chili!)

Add some more jalapeños, make some cornbread and just watch the game on TNT…
