Ingredients
3/4 cup butter (room temp)
2 eggs (room temp)
2 tbsp Vanilla
1/2 tsp salt
1 tsp baking soda
1 1/2 cups flour (6 oz)
1 cup brown sugar (7 oz)
1/2 cup white sugar (3.4 oz)
2 cups oats
1 cup walnuts
1 cup chips

Method
Sift flour, salt and baking soda.
Add chips, nuts and oats.
Cream butter and sugars.
Add eggs and vanilla.
Fold in dry with butter mix in batches.
Let stand a few before baking.
13 minutes @ 335 degrees


Hoisin Stir Fry Rice

Ingredients

1 tbsp oil
1 cup cooked rice
palm full red pepper
jala or serrano (your choice amt)
1 grn onion
1 tblsp Rice Vinegar
1/3 tsp Hoisin
2-3 eggs

Method
oil a hot fry pan and stir rice and veggies till crispy
create a center hole and add tbsp or so of rice vinegar and 1\3 tsp Hoisin
stir together…
add eggs in another center hole stirring minimally


Homemade Ricotta Cheese

Tip from Bon Appetite

Real Ricotta is made from reheating (Ricotta means ‘recooked) the whey left over from Mozzarella.
Lasanga is expensive to make mainly for the cheeses. This eases the pain a bit.

Ingredients

4c whole milk
1c cream
1.5 tsp kosher salt
2tbsp lemon juice

Method

Bring just to a boil without stirring and immediately remove from heat.
Let stand for 15 minutes at room temp. The curds will seperate from they whey. If not add more lemon juice.
Using a large spoon, not slotted, spoon into a cheesecloth lined sieve over a large bowl.

The longer you drain the more dense and flavorful the cheese.
